1 Banana, large, peeled
2 Eggs, large
1 scoop Whey Protein (24 g protein)
1 tsp Butter, unsalted
1 drop Monk Fruit Extract
Pinch of salt (optional)
Break down and mash the banana(s) in a small bowl with a fork. In a larger bowl beat the eggs with a fork until smooth. Add the whey protein powder and give it another whisk to incorporate the powder well. Add the banana mash and the monk fruit, add salt if desired. Whisk until the batter is almost completely smooth.
Heat a large non-stick pan on high heat, melt the butter and pour approx. 3-inch pancakes. Turn the heat to medium-high and flip the pancakes when they are golden brown underneath.
Serve with a sprinkle of cinnamon powder.
