Ingredients (Makes 4 muffins):

1/2 cup, Peas, canned, drained
2 Eggs, large
6 Egg Whites, large

Preparation:
Pre-heat the oven at 400F.
In a large bowl whisk the eggs and egg whites together until smooth. Add salt and pepper and give it a good stir.
Grease a muffin tin with the olive oil. Divide the peas equally between the molds, pour the egg mixture over dividing it equally.
Bake for about 25 minutes, until the muffin tops turn golden color.
