6 oz boneless, skinless chicken thighs
2 oz sliced ham
1 slice swiss cheese
Salt, pepper and 1/4 tsp garlic powder (optional)
Preheat oven to 425. Line a baking dish with foil. Sprinkle chicken with salt, pepper and garlic powder. Bake about 25 minutes, flipping halfway through, until no longer pink inside.
Remove from oven and turn oven up to broil.
Top chicken with ham, then cheese, and return until cheese is melted and lightly browned. Watch constantly.
Serve with 1 serving cauliflower mash (recipe below).
Buttery Cauliflower Mash Recipe
1 medium head cauliflower
Salt and pepper
1/8 cup butter
1/4 cup heavy whipping cream
minced garlic (a clove or 2)
garlic powder (1/2 to 1 tsp.)
grated cheese such as parmesan
Break the cauliflower up into florets, or just chop up the head into pieces.
Steam until it's tender- a fork should easily pierce it.
Place cauliflower in a food processor and blend until smooth and creamy.
Season with salt and pepper.
Then slowly blend in butter and cream.
