6 1/2 oz, Chicken Thigh meat, deboned, no skin
1 oz, Mango finely chopped
1/2 tbsp chopped Chives
1/2 tsp, Salt
1/2 tbsp, Coconut Oil
1/2 medium, Onion, finely chopped
1/2 tsp, Red Chilli Pepper
Salt and pepper to taste
Grind your chicken finely in either a meat grinder or food processor. Place in a bowl. Add the mango, salt, pepper and the finely chopped onion. Mix well and form into 2 equal shaped burgers.
Cover with plastic and place in the fridge for a while to firm up.
Heat a frying pan on high. Once hot, add the oil and turn the heat down to medium-high.
Roast the burgers until golden brown on both sides and cooked through, approx. 5 minutes per side.
Sprinkle with chives and enjoy.
